A tasty side for Christmas
1.5kg Rooster potatoes, peeled & cut into chunks
4 tbsp duck fat or 6 tbsp olive oil
A handful fresh tarragon leaves
Preheat the oven to 190°C.
Cook the potatoes for 8 mins.
Put duck fat or oil in a roasting tin & heat in the oven.
Drain the potatoes, then tip into the roasting tin, basting them quickly.
Season with salt & roast for 1 hour, adding tarragon for the last 20 mins.
