Dark chocolate and mint cake
Chocolate cake but not as you know it, with this decadent dark chocolate and mint cake.

285g Dairygold
300g granulated sugar
250g dark brown sugar
3 eggs
1 tbsp vanilla extract
70g cocoa powder
300ml hot water
150ml soured cream
370g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
½ tsp salt
Mint chocolate ganache
225g dark chocolate, minimum 70% cocoa solids, broken into pieces
175ml whipping cream
25g Dairygold

1 tsp peppermint extract

Mint cream

300ml cream

1 tsp peppermint extract

Sprig of mint, to decorate

Grease and line a 10 inch springform cake tin.

Preheat oven to 170°C/325°F/Gas 3.

Beat the Dairygold and sugar together until light and fluffy. Add the granulated sugar and beat together well. Slowly add the eggs, beating between each one one. Add the vanilla extract and mix until well combined.

Mix the cocoa powder, hot water and soured cream together in a bowl. Sift the flour, baking powder, bicarbonate of soda and salt together into the batter.

Pour over the cocoa mixture and blend together well.

Pour the cake mixture into the prepared cake tin bake for 40-45 minutes, or until springy to the touch. Remove the cakes from the oven and leave to cool completely on a wire rack.

To make the mint chocolate ganache, heat the chocolate and cream over a gentle heat for 1-2 minutes or until the chocolate has melted. Add the Dairygold and peppermint extract and melt for a further minute, stirring well. Set aside to cool, then chill in the fridge until it begins to thicken slightly.

Whisk the cream and peppermint extract together.

Spread the cream over the bottom layer and continue to spread between all the layers.

Ice the top of the cake with the chocolate ganache and decorate with a sprig of mint.
