Is there such thing as too much chocolate?
For the base
24 sandwich cookies, crushed
100g butter, melted
For the filling
800g cream cheese, softened
170g icing sugar
30g cocoa powder
4 eggs
250g dark chocolate, melted
For the ganache
200ml cream
200g dark chocolate, chopped
Preheat oven to 180°C. Mix sandwich crumbs and melted butter and press into the bottom of 9 inch springform pan. Bake for 5 to 10 minutes and let cool.
Beat the cream cheese with the sugar and cocoa powder until smooth. Add the eggs, one at a time. Add the cooled down melted chocolate and mix until smooth. Pour the mixture over the crust and spread to get a flat surface. Bake for 60 to 70 minutes. Let cool for a few minutes then remove from tin and refrigerate overnight.
Heat the cream and pour over a bowl with the chopped chocolate. Let sit for one minute and mix until smooth and glossy. Pour the ganache allowing it to run down the sides a bit. Top with chocolate shavings to decorate if desired.
