Deep fried turkey balls

100g Kilmeaden White Cheddar, diced
400g minced turkey
2 slices sandwich bread, toasted
1 onion, finely chopped
1 tsp red chilli flakes
1 tsp paprika
1 tbsp chopped parsley
2 eggs
125g shredded mozzarella
100g yoghurt
2 tbsp sundried tomato paste
1 tsp cayenne pepper
Salt and pepper
Cut the toasted bread into squares and put in the food processor. Pulse until it forms breadcrumbs.
With your fingers, combine turkey mince, onion, half the breadcrumbs, mozzarella, red chilli flakes, paprika, chopped parsley, one egg, salt and pepper.
Form balls the size of a golf ball. Make a well and fill in with a dice of Kilmeaden White Cheddar. Close the ball. Dip each ball into flour, then in one beaten egg, then in the rest of the breadcrumbs and fry in vegetable oil for about 15 minutes.
Mix the yoghurt, sundried tomato paste, cayenne pepper and salt. Serve this dipping sauce with the turkey meatballs.
