Diggers Sweet and Sour Chicken Balls
Made with Diggers Battered Chicken Balls, this is a quick, easy alternative to your favourite takeaway!
1 x 320g bag of Diggers Battered Chicken Balls
For the sauce
50g Ketchup
50g light brown sugar
75ml rice vinegar
50ml soy sauce
150ml chicken stock
1 tbsp cornflour
Serve with
Rice
Pineapple pieces
Spring onion, chopped
Fresh coriander, finely chopped
1. Empty the bag of Diggers Battered Chicken Balls onto a baking tray and place in preheated Fan oven at 180oC, cook for 20 - 25 minutes as per instructions on packaging.
2. Pour all ingredients for the sauce into a pot, mix well and stir over medium to high heat.
3. Bring sauce to the boil, then simmer until tickened stirring constantly. Remove from heat.
4. Cook the rice as per instructions on packaging.
5. While rice is cooking, prepare pineapple pieces, spring onion and fresh coriander.
6. Once chicken and rice is ready, serve in a bowl with pineapple pieces and cover with sauce.
7. Add spring onion and coriander to garnish.
