Easy chilli
Everyone loves a good chilli. A bit of heat on cold days is a warm welcome and can be dressed up for a dinner or served as a cosy lunchtime meal.
 

500g beef mince

1 large onion, diced

4 cloves of garlic, crushed

1 tbsp olive oil

1 tsp dried chilli powder (or to taste)

2 tbsp tomato paste

1 tin whole peeled tomatoes

1 tin kidney beans, drained

2 tsp dried oregano

1 tsp cumin

250ml of beef stock

Cheddar cheese garnish (optional)

Rice (optional)

In a pan, heat the olive oil and brown the mince before adding the onion, chilli, cumin and garlic then cook until well browned.

Stir through tomatoes, tomato paste and beef stock.

Simmer for 20 minutes. Check if the tomatoes are acidic and add sugar to taste if necessary.

Add the beans and oregano cooking for a further 5 minutes.

Season with salt and pepper, and top with cheddar cheese if using as a garnish.

Serve warm and with tortilla wraps, taco shells or if you like chilli with rice, cook the rice while the chilli is simmering then serve.
