Easy fishcakes
A great way to get your little one to eat fish.

3 large potatoes

2 tbsp butter

185g tin of tuna, drained

1 egg

1/2 head broccoli, chopped finely

40g cheddar cheese

75g plain flour

Cook the potatoes in a pot of lightly salted water until they are soft. Once cooked, add in a little butter and mash the potatoes using a fork.

In a large bowl mix the tuna, egg, broccoli, sweetcorn and cheese.

Add the mash potato to the tuna mixture, season well and combine.

Using your hands, shape the fishcakes to the size you fancy.

Heat olive oil in a frying pan and cook the fishcakes until both sides are golden and crispy.

Serve with salad.
