Easy Mince Pies

340g self raising flour

220g butter

120g caster sugar

1 jar of mincemeat

1 small egg

Icing sugar for dusting

Preheat the oven to 200 and grease two bun trays. 

Using a large bowl, rub the butter into the flour until it resembles fine breadcrumbs.  

Next add in the sugar and mix well.  

Bring the dough together using your hands without adding any liquid. 

Divide the dough into two and use one half to create the bases of the mince pies. Roll the dough out on a floured surface and using a cookie cutter, cut out 24 bases and place each one in the bun tray. 

Place a spoonful of mincemeat in each.  Edge the pastry of each mincepie with a little water  to help seal them. 

Next roll out the second half of the dough and cut into 24 circles to top each mince pie. Pinch closed or use a fork to seal. 

Prick each mince pie with a fork and brush with some beaten egg. 

Bake for 20 minutes  - remove from the oven and allow to cool in the tin for 20 minutes before removing to cool fully on a wire rack. 

Dust with icing sugar to serve.
