Eggwiches

Tea time favourites or afternoon snacks, either way they are a hit.
3 hard-boiled eggs, cooled
2 tbsp fresh chives, chopped finely
1-2 tbsp mayonnaise
4-6 slices Johnston Mooney & O'Brien white bread
2 tbsp softened butter
Cress, to serve
Hard boil the eggs, run them under cold water then peel and finely chop them.
Mix with the mayonnaise and some seasoning.
Spread the bread with butter and make the sandwiches.
Cut into neat fingers and stack on a plate.
Serve with the cress on the side.
