Favourite chocolate fudge cake

225g dark chocolate
225g unsalted butter
345g caster sugar, plus an extra pinch
6 eggs, separated into yolks and whites
120g ground almonds
145g soft white breadcrumbs
30g plain flour
4 tsp vanilla essence

Heat the oven to 160°C. Grease a 24cm round cake tin and line it with baking paper.
Making the cake: put the chocolate in a bowl and melt it in a bain-marie. Set aside to cool down.
Whisk together the butter and 345g of sugar until the mixture turns pale and fluffy.
One by one, whisk in the egg yolks then add the almonds. Stir in the melted chocolate, breadcrumbs, flour and vanilla essence.
In another bowl, add a pinch of sugar to the egg whites and whip them until firm. Gently fold into the dough, one spoonful at a time. Tip the mixture into the cake tin and bake for 1 hour. The cake should be firm to the touch.
Making the icing: Sift the cocoa powder and icing sugar into a bowl.
Place the butter, the sugar and the water in another bowl and melt in a microwave or in a bain-marie. Pour into the cocoa-sugar bowl and stir until the mixture has thickened.
Cover the cake with the chocolate icing.
Serve with coffee ice cream.
