Festive salmon with clementines
An elegant and festive dish for your family

Finely grated rind & juice of 4 clementines, plus 2 clementines, unpeeled & cut into thin slices

100ml gin or vodka

5 tbsp honey

1 tsp cracked mixed peppercorns

440g side of fresh salmon, bones removed

For the salad

2 Little Gem lettuces

6 radishes, thinly sliced

2 ripe avocados, cut into slices

1 bunch spring onions, finely sliced

2 tbsp French dressing

Cook the clementine zest & juice, gin or vodka & peppercorns for 10 minutes until reduced by half.

Add the clementine slices & simmer for another 5 minutes until the clementines are softened & a little sticky.

Remove them from the heat & transfer to a plate, then allow the remaining liquid to reduce to a glossy glaze.

Preheat the oven to 190°C. Line a baking sheet with baking parchment.

Place the fresh salmon in the middle of the baking sheet, brush over with some of the glaze.

Arrange the candied clementine down the centre and bake for 25 minutes.

Arrange the salad ingredients in a bowl & drizzle over the dressing.

Serve with the salmon & the rest of the glaze.
