Foolproof slow roast chicken

Butter, for greasing

1.6kg, chicken

1kg roasting potatoes, halved or quartered if large

2 whole garlic heads, halved through the middle

100ml white wine

100ml chicken stock

2 stems of rosemary, broken into sprigs

6 bay leaves

1 lemon, cut into wedges

Preheat oven to fan 140°C/gas 3. Grease a large roasting tin well with butter and then rub some over the skin of the chicken.

Lift the chicken in the tin and surround with the potatoes. Place the halved garlic heads in the tin, pour the white wine and stock over the chicken and stock, then cover with foil and transfer to the oven. Cook for 1 hr then take off the foil and turn the potatoes. Place the herbs and lemon wedges around the chicken and then cook uncovered for 50 mins.

Turn the heat up to fan 200°C / gas 7. Cook for a further 30 mins and then take out the chicken and potatoes from the pan. Cover the chicken loosely with foil and leave aside to rest on a plate for at least 10 mins before carving. Serve with any remaining juice in the pan and some honey glazed carrots.
