Pot roast lemon and thyme chicken

700g potatoes, peeled and cut into large chunks
1.5kg whole chicken, washed and patted dry
1 bulb garlic, cut in half
50g butter, softened
100 ml teriyaki sauce, such as Kikkoman teriyaki marinade
1 lemon, cut in half
1 tbsp thyme
Heat the oven to 200°C.
Pour water into a large saucepan and bring to the boil. Add the potatoes and cook for about 10 minutes. . Use a colander to drain the water.
Put the chicken into a large roasting dish and place the potatoes all around.
In a bowl, combine the butter, teriyaki sauce and thyme together. Rub all over the skin then place the lemon and garlic into the chicken.
Put in the oven for about 1 hour 15 minutes, stirring the potatoes often until crunchy.
Serve the chicken with the potatoes and your vegetables of choice.
