French chocolate cake

This decadent chocolate cake is so indulgent and perfect for satisfying your chocolate craving.
110g best quality dark chocolate
2 tbsp dark rum
110g softened butter
110g and 1 tbsp caster sugar
3 eggs
Pinch salt
50g ground almonds
50g plain flour
For the chocolate icing:
170g best quality dark chocolate
1 tbsp dark rum
170g softened unsalted butter
Toasted flaked almonds
Preheat the oven to 180°C / 350°F / Gas Mark 4. Grease two 18cm sandwich tins and lined with non-stick baking paper.
Melt the chocolate with the rum.
Cream the butter and sugar until pale and fluffy.
Separate the eggs and beat in the yolks.
Whisk the egg whites with the tablespoon of caster sugar and a pinch of salt until very stiff.
Stir the melted chocolate into the butter and suagr mixture, followed by the ground almonds.
fold in one-third of the egg white, then the flour.
Fold in the remaining egg white.
Divide the mixture between the sandwich and place in the preheated oven for 18-22 minutes.
The sides should be cooked but the centre should still be slightly underdone and unset.
To make the icing. melt the chocolate with the rum. Beat in the butter and allow to cool until it is a spreading consistency. Sandwich the cakes with one-third of the icign and use the remainder to cover the top and sides. Decorate with flaked almonds.
