French gingerbread

French gingerbread
This gingerbread tastes delicious with or without butter. 

1 tsp butter to grease
200g honey
60g brown sugar
180 ml water
Pinch salt
175g plain flour
90g whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1 tsp nutmeg
2 large eggs

Preheat the oven to 180°C/ 350°F/ gas mark 4. Lightly grease a 9-inch loaf tin with the butter.

Spoon the honey into a large saucepan over a medium heat.

Add the brown sugar, water, and salt and bring to the boil.

Reduce the heat and leave to simmer for a couple of minutes.

Remove from heat and allow to cool slightly.

In a small bowl combine the plain flour with the wholewheat flour, baking powder, baking soda, cinnamon, ginger and nutmeg.

In another bowl, beat the eggs together.

Pour the honey mix into the dry ingredients and add the eggs. Mix until well combined.

Spoon the mixture into your loaf tin and place in the oven for 45 minutes.

Remove and allow to cool for a few hours on a wire rack before serving.
