Lovely moist brownies which have the added bonus of being gluten-free.
200g dark chocolate
250g butter
4 eggs
1 tsp vanilla extract
300g caster sugar
125g gluten-free plain flour
Preheat oven to 180°C/350°F/Gas 4.
Grease and line a 20cm square cake tin
Melt together dark chocolate and butter in the microwave or over a double boiler.
Whisk eggs, vanilla extract and caster sugar together.
Pour melted chocolate mix over egg mix.
Add sifted gluten-free flour to the mix.
Transfer to prepared cake tin and bake for 40 minutes.
Remove from the oven and leave to cool.
Cut into small squares and serve.
