Gluten-free rustic loaf

An easy and rustic loaf for the bread tin, it freezes well too.
500g gluten-free white flour
7g dried yeast
2 tbsp vegetable oil
250-300ml warm water
Preheat the oven to 220°C / 425°F / Gas mark 7.
In a large bowl, combine the flour and yeast.
Stir in the oil and enough water to form a soft but not sticky dough.
On a clean surface, lightly dusted with more gluten free flour, knead the dough until smooth.
Shape the dough into an oval and using a sharp knife, make shallow incisions on top.
Leave in a warm place for approximately 30 minutes, whereby it should have doubled in size.
Bake for 25-30 minutes until golden brown.
