Gluten-free scones
Have your scones, gluten free.

200g gluten-free fibre flour

1tsp gluten free baking powder

50g butter

25g caster sugar

1 medium egg, beaten with sufficient milk to make 125ml of liquid

Preheat the oven to 220°C / 425°F / Gas mark 7.

Line a baking tray with greaseproof paper and set aside.

Place the flour and baking powder in a large bowl and rub in the butter until the mixture resembles breadcrumbs. (This is easily done between your fingers)

Stir in the caster sugar and then add sufficient liquid to form a soft but not sticky dough.

Knead on a lightly dusted surface and pat down until the dough is 2.5cm thick.

Cut out scones using a cup or round cutter (re-knead any trimmings and repeat).

Place onto the baking tray and bake for 10-15 minutes until golden brown.
