Golden roast potatoes

Golden roast potatoes

1kg Maris Piper potato

100g duck or goose fat, or 100ml olive oil

2 tsp flour

Sea salt, to serve

Pop a roasting tin in a preheated oven to 180°C/ 350°F/gas 4. Peel each potato into 3-4 even chunks. Drop the potatoes into a large pan and pour in enough water to cover them. Add salt and then allow the water to boil, as soon as the pot is boiling, lower the heat and put the timer on, simmer for 2 minutes. Put the oil or fat into the roasting tin and heat in the oven so it's very hot.  

Drain the potatoes and shake them vigorously in the colander. This makes the outsides fluffy. Sprinkle with the flour, shake again until they are evenly covered. Gently leave the potatoes into the hot fat and then turn and roll them until they are fully covered. Spread in a single layer. Cook for 15 minutes and then turn them. Repeat every 15 minutes until golden crisp. Sprinkle with a little salt and serve with a little rosemary.
