Greek inspired filo pizza
Salty feta cheese, tomatoes, and basil make this an ideal lightweight pizza that packs a savoury Mediterranean punch.
 

100g mozzarella, grated

100g feta cheese, (or vegan alternative) finely crumbled

50g parmesan cheese, grated

1 tbsp fresh oregano

¼ tsp salt

1/8 tsp freshly ground black pepper

10 frozen filo pastry sheets, thawed

Cooking spray

2 large tomatoes, well chopped

4 spring onions, finely chopped

Handful rocket, whole for garnish

Preheat the oven to 190°C / 375°F / Gas mark 5.

Line a baking tray with greaseproof paper and set aside.

Combine the cheeses, oregano, salt and pepper in a bowl.

Cut filo sheets in half. Working with 1 filo sheet half at a time, place filo sheet on the baking tray and repeat with 2 more layers of filo.  

Sprinkle with 2 tablespoons of the cheese mixture.

Repeat layers 5 times, ending with 2 filo sheets.

Coat the top filo sheet with cooking spray and sprinkle with 2 tablespoons cheese mixture.

Arrange the tomato slices on top of the cheese, leaving a 2.5 cm border.

Sprinkle with the onions and the remainder cheese mixture.

Bake for 20 minutes or until golden. Sprinkle with rocket leaves.
