Grilled sea bass and corn on the cob
Lovely fresh sea bass with lemon and charred corn on the cob kicks off lighter nights superbly.
 

2 tbsp lemon juice

1 tsbp olive oil

Salt and freshly ground black pepper to taste

1 bay leaf

1kg fresh sea bass, cut into steaks

4 x corn cobs

Sesame seeds, as garnish (optional)

Fresh flat leaf parsley, as garnish

Cover the corn cobs with water and bring to the boil, cook until tender.

Preheat a grill pan over medium heat and lightly oil.

Cook the corn on the grill to char a bit then wrap in kitchen foil and set into an oven on low to keep warm.

In a small bowl, stir together lemon juice, olive oil, salt, pepper and bay leaf.

Rub the fish steaks with mixture to full coat everywhere.

Cook the fish over medium heat for 8 to 10 minutes, flipping halfway through.

Top with the sesame seeds and the parsley if using.

The fish is cooked when it flakes easily with a fork.
