Zest and juice 1 large lemon
1 garlic clove, diced finely
10g fresh tarragon, finely chopped
2 tbsp olive oil
4 salmon fillets
Add the lemon zest and juice, garlic, tarragon and olive oil into a shallow, non-metallic dish and combine well.
Season with salt and pepper, then tip in the salmon fillets. Coat them in the mixture, rubbing it into the fish well.
Cover and set aside for 10 minutes.
Remove the salmon from the marinade and grill under a high heat for 7-10 minutes, until cooked thoroughly.
