Haddock with herb crust
This delicious haddock dish is light and packed with flavour, a delicious mid-week meal.
 

1 tbsp olive oil, plus extra

140g (4 ) skinless unsmoked or smoked haddock fillets

10 cherry tomatoes

3 tbsp mayonnaise

1 garlic clove, crushed

100g white breadcrumbs

Zest and juice 1 lemon

2 handfuls flat-leaf parsley, leaves roughly chopped

Preheat the oven to 200°C / 400°F / Gas mark 6.

Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other.

In a small bowl, mix the mayonnaise with the garlic crushed garlic, then spread evenly over the fish.

Blitz 2-3 slices of white bread in a food processor to make the breadcrumbs.

In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season with salt and pepper.

Top the fish with the breadcrumb mixture and gently compress it down using your hands or a spatula.

Drizzle olive oil over the fish and tomatoes, and bake for 15 minutes or until the fish flakes slightly when pressed and the crust is golden.
