Heavenly chocolate cheesecake

900g cream cheese

190g caster sugar

1 tsp vanilla extract

4 eggs

200g chocolate, roughly chopped

For the base

200g digestive biscuits

2 tbsp cocoa powder

150g unsalted butter, melted

Heat the oven to 150°C. Grease a 23-cm springform cake tin then line with wax paper.

Process the biscuits and cocoa powder in a food processor. Combine with the melted butter then spread into the cake tin, pressing down to form a crust. Set aside in the fridge.

Whisk together the cream cheese, sugar and vanilla extract until thick and smooth. Beat in the eggs, one by one.

Melt the chocolate in a bain-marie.

Add the cream cheese mixture to the melted chocolate, one spoonful at a time, then pour over the crust.

Place the tin into a baking sheet and fill with water (about 2/3 up).

Put in the oven for about 40 to 50 minutes, until set yet soft. Allow to cool down, top with foil and chill overnight.
