An easy recipe for a tasty weeknight dinner
30g fresh breadcrumbs
1 small bunch of parsley and dill
1 garlic clove, crushed
2 tbsp freshly grated parmesan cheese
Salt and freshly ground black pepper
1-2 tbsp olive oil
4 salmon fillets
Fresh lemon to serve
Preheat the oven to 200⁰C Hot Air Grilling with low added steam.
Attach the super cut blade to the bowl of the multi talent food processor. Put in the breadcrumbs. Add the fresh herbs, garlic, parmesan, salt, pepper and olive oil. Pulse to combine, until the herbs are chopped but not over processed.
Place the salmon skin side down on the universal pan lined with parchment. Spread over the breadcrumb mixture. Place in the centre of the oven and cook for 10-12 minutes at 200°C depending on the size of the salmon fillets.
Remove from the oven and serve with fresh lemon.
