Herbed salmon packets

200g spinach leaves, washed
A side of salmon (skinned, trimmed and pin bones removed)
3 limes, sliced into rounds
2 scallions, finely sliced
1 small bunch fresh dill, washed and chopped
20g fresh basil leaves, washed
20g fresh rosemary leaves, washed and chopped coarsely
120ml white wine or fish stock
5ml sesame oil
Salt and pepper to taste
Zest of 1 lemon for garnish
Preheat the oven to 160ºC / 350ºF / Gas Mark 4.
Place one large piece of aluminum foil on counter and then place one more on top to double it.
Spread spinach in the centre area of the foil.
Put salmon fillet on spinach and top with herbs, onion and lime rounds.
Fold aluminum foil into a big packet leaving a small open slit in the top.
Whisk white wine, sesame oil, salt and pepper in small bowl.
Pour 30ml of wine mixture into the package and seal it.
Place salmon pack on tray and bake 20-30 minutes for medium salmon.
Garnish with lemon zest and fresh rosemary sprigs on wilted spinach.
