Honey & yogurt wholemeal loaf

Tasty bread that can be served before or with your main meal, or is lovely as part of a light lunch.
75g butter
4 tbsp honey
120g light brown sugar
1 beaten egg
150ml natural yogurt
230g wholemeal flour
1 level tsp bread soda (sieved)
2 level tsp ground cinnamon
1 tbsp flaked porridge oats (optional)
Preheat the oven to 180°C/350°F/Gas 4 and lightly grease a 2lb loaf tin.
Gently heat the butter and honey in a saucepan over a low heat.
In a separate large mixing bowl, beat the egg, sugar and yogurt together.
Add the wholemeal flour, sieved bread soda, cinnamon, melted honey and butter to the liquid mixture.
Beat well until all ingredients are blended - then spoon into the prepared loaf tin. Sprinkle porridge oats on top if using.
Bake for 60 minutes until springy to the touch.
Cool in the tin for 10 minutes and then transfer to a wire rack to cool fully.
