Hot and spicy chilli sauce

If you are after something hot and spicy then this jam is for you. Packed with chillies and loaded with flavour it is ideal served with burgers.
1 tbsp olive oil
1 tsp ginger
½ onion, finely chopped
1 garlic clove, minced
3 large mild red chillies, seeded and chopped
50g caster sugar
8 large tomatoes, finely chopped
In a large sauce pan, heat the oil over medium temperature.
Add the ginger, onions, garlic and chopped chillies. Gently sauté for about 8 minutes.
Add the sugar and cook until it has completely dissolved. Continue until it has started to caramelise.
Toss in the chopped tomatoes and cook for a further 4 minutes. Pour it all into a bowl and blend using a hand held blender.
