Basil pesto

Basil pesto
It takes no time to make your own pesto and it can be stored in jars in the fridge ready for use.  A jar of homemade pesto also makes a lovely gift. 

2 cloves of garlic

1 handful of basil leaves

25g pine nuts

1/2 tsp salt

6 tbsp olive oil

100g parmesan

Smash and chop garlic, tear basil leaves into shreds.

Process the garlic, basil, nuts and salt with 1/2 the oil in a food processor. 

Add the parmesan and remaining oil and blend to a thick paste.

Store in small sterilised jars, cover with a layer of olive oil before sealing. Store in a cool, dark place.
