Irish Stew
Irish stew is a great heart-warming dish and is perfect for the kids after school. 
 

500g lambs pieces, cubed

Pinch salt and pepper

1 onion, sliced

3 carrots, chopped

100g mushrooms, sliced

2 stock cubes (vegetable, beef or chicken)

500ml water

2 tsp olive oil

1 tsp brown sugar

8 baby potatoes, halved

Pre-heat oven to 170°C or gas mark 3

Gently boil the baby potatoes for about 8 minutes but don’t allow them go soft. Remove and set aside.

Heat a saucepan with a little oil on a medium temperature and gently cook the lamb for about 10 minutes until it is brown.

Layer the vegetables into the bottom of an ovenproof dish. Spoon the meat and potatoes over it.

Season with salt and pepper.

Mix the water with the 2 stock cubes and pour over the ingredients.

Place in the oven for 2 hours. Don't allow it to boil for too long and reduce the heat if it it continuously boiling.
