Italian stew with garlic mash

Italian stew with garlic mash
A hearty, Italian inspired stew packed with delicious flavours.
 


8 good-quality pork sausages, sliced roughly into chunky bite sized pieces

2 tbsp olive oil

2 carrots, finely chopped

2 celery sticks, finely chopped

1 onion, finely chopped

2 rosemary sprigs, 1 chopped

3 garlic cloves, roughly chopped

175g dried green lentils, rinsed

400g tin chopped tomatoes

700ml vegetable stock

1kg potatoes, cut into chunks

150ml milk

Knob of butter

Fry the sausages in 1 tablespoon of oil in a casserole dish or frying pan until brown.

Remove the sausages and set aside.

Tip in the carrots, celery and onion and cook for 10 minutes.

Add the chopped rosemary and half the garlic and cook for 1 minute.

Add the lentils, tomatoes and the stock.

Return the sausages, bring to the boil, cover and simmer for 20 minutes.

Remove the lid and cook for a further 10-15 minutes until lentils are soft.

Season with salt and pepper.

Boil the potatoes until tender. In another pan, heat the milk, butter, remaining garlic and rosemary until just about to boil, then turn off heat.

Drain the potatoes well.

Strain the milk over the potatoes but add the garlic (so you have removed the rosemary essentially)

Mash well then season with salt and pepper. Serve with the stew.
