Spiced sausage stew with mixed beans and herbs

A lovely hearty dish and can be made in record time.
227g high in pork content, pork sausages
2 rashers bacon, diced
1 onion, diced
1 carrot, peeled and diced
1 clove garlic, minced
¼ tsp mild chilli powder (if you like hot, then you can select the hot chili powder)
6 basil leaves chopped
¼ tsp dried thyme
1 cup vegetable stock
1 tsp tomato paste
2 stalks flat parsley, chopped
420g tin chopped tomatoes
420g tin mixed beans (red kidney beans, chickpeas, butter beans etc) rinsed and drained
Cut the sausages into bite sized pieces.
In a large saucepan, heat up the olive oil then add in the sausages and brown gently. Add in the onion, bacon, carrot, garlic and fry until onions are softened.
Add the chili powder, basil and thyme then the tomatoes and gently cook on low heat.
Add the beans stock, tomato paste and let simmer for 15 minutes.
Serve with crusty bread.
