Jam tarts
Fun and easy to make and cheap too! 

230g plain flour
140g butter (chilled)
30g caster sugar
1 beaten egg
60ml or 4 tbsps water (approximately)
Jam to fill or homemade lemon curd

Preheat the oven to 200°C/400°F/Gas 6 and lightly grease a bun tray.

Put the flour and butter into a bowl, rub the butter in until the mixture resembles fine breadcrumbs.

Mix in the sugar.

Add the egg and enough water to just bring the dough together - a little at a time is best.

If time allows, shape into a round, wrap in cling film and chill in the fridge for 30 minutes.

Remove from fridge, turn onto a lightly floured board and roll out to approx 3mm deep.

Using a 7-8 cm cookie cutter, cut the dough into rounds. Put the rounds into the prepared bun tin and prick each with a fork.

Bake in the preheated oven for around 10 minutes.

Remove from the oven and place a teaspoon of your preferred jam or curd into each. Return to the oven for a further 10 to 15 minutes until pastry is nicely golden brown.

Remove from oven and allow to cool in the tin for 5 minutes and then transfer to a wire tray to cool.
