Jerk chicken burger
A lovely spiced chicken burger with fresh mango and lime hits.
 

270g chicken breasts or fillets

Few thyme sprigs, leaves picked

1 tbsp olive oil

2 tsp jerk seasoning

Juice 1 lime

Few slices of cheddar cheese (optional)

2 large bread rolls

½ small mango, stoned, peeled and sliced

1 tomato, sliced

1 Little gem lettuce heart, shredded

2 tbsp mayonnaise and ketchup, to serve (optional)

In a bowl, mix together the thyme, oil, jerk seasoning and half the lime juice in a bowl.

Add the chicken and leave to absorb the flavours for 5 minutes.

Heat a griddle pan until hot and cook the chicken for 4-5 minutes each side or until cooked through then top with thinly sliced cheese if using.

Remove from the heat.

Lightly toast the buns then serve with the chicken, mango, lettuce and dressings.
