Lamb and feta meatballs with wholemeal tortillas or flatbreads

This is a beautiful dish, easy to make and the entire family will enjoy it.
500g lamb mince
Handful fresh breadcrumbs
1 clove garlic, crushed
1 egg, whisked
2 tbsp fresh parsley, finely chopped
100g feta cheese, crumbled
1 carrot, peeled, grated
1 small courgette, grated
Vegetable oil cooking spray
Wholemeal flat breads, tortillas or pita breads
Fresh parsley leaves, as garnish (optional)
Preheat the oven to 200°C / 400°F / Gas mark 6.
Line a large baking tray with greaseproof paper and set aside.
In a food processor, add 2 pieces of bread along with salt and pepper.
Blitz until there is a breadcrumb texture.
For the meatballs, combine the lamb, garlic, egg, parsley, feta, carrot and courgette in a bowl adding the breadcrumbs.
Use your hands to mix well, then roll into meatballs and place on the baking tray.
Spray meatballs lightly with the cooking spray and bake for 10 minutes.
Use tongs to carefully turn over, spray with more cooking spray and bake for another 5-10 minutes until cooked through.
Take a large sheet of baking paper and run under water.
Squeeze the excess water out and place the wholemeal pita, tortillas or flat breads onto the baking paper and wrap up into a parcel.
Place in the oven for about 5-7 minutes. This will warm and slightly crisp up the breads or tortillas.
Use parsley over the meatballs as garnish if desired.
