Lasagne with sausages

This recipe is great if you have any leftover sausages that need to be used.
6 sausages, cooked
100g cheddar cheese, grated
4 large tomatoes chopped
700g jar tomato passata
2 tbsp olive oil
1 onion, diced
1 clove garlic, crushed
4 lasagne sheets
30g butter
1 tbsp plain flour
375ml warm milk
Parsley to garnish
Preheat oven to 190°C or gas mark 5.
Heat the oil over a medium heat and add the onion and garlic. Gently cook for about 4 minutes before pouring in the tomatoes and passata. Allow to simmer for 30 minutes.
While that is simmering, you can make the white sauce. Gently melt the butter in a saucepan adding in the flour a little at a time. Next you will need to add the milk but ensure you whisk it to avoid getting lumps. Allow to thicken before adding 50g of the cheese.
Once the sauce is done you can layer the pasta sheets, white sauce and mince into the lasagne dish.
Top with the white sauce and sprinkle the rest of the cheese over it.
Place in the oven for 45 minutes until it is golden.
Garnish with parsley.
