Lavender shortbread

These biscuits are very gently infused with lavender and are wonderfully reminiscent of Easter time.
115g butter, softened
55g lavender sugar
150g plain flour, sifted
Heat the oven to 150°C.
Cream the butter and sugar with a wooden spoon until pale and fluffy.
Pour in the flour and mix using your fingers until you obtain a soft dough.
Roll out the dough on a floured surface to 3mm thickness.
Cut shapes with a cookie cutter.
Move the shapes onto a baking sheet covered with baking paper.
Put in the oven for 20 to 30 minutes or until the shortbreads take a light gold colour.
Let them cool down on a wire rack then place them in an airtight tin until serving.
