Leftover roast chicken and couscous wraps

These deliciously easy wraps are a great way to use up leftover chicken. Bundle up in foil for a filling, portable packed lunch. The leftover meat needs to be thoroughly reheated until piping hot and should never be reheated more than once.
130g (4 1/4oz) couscous
1/2 lemon, juiced and grated rind
15ml (1tbsp) extra virgin olive oil
1/2 cucumber, seeds removed and finely diced
200g (7oz) cherry tomatoes, roughly chopped
Small bunch parsley, leaves chopped
Small handful mint leaves, chopped
200g (7oz) leftover roast chicken, torn into pieces
75g (3oz) leftover stuffing (or cooked diced chorizo), crumbled
4tbsp natural yogurt
4 large wraps
Place the couscous in a bowl, squeeze over the lemon and add the zest, olive oil and seasoning. Pour over 260ml (8 1/2fl oz) boiled water from the kettle, stir, then cover with cling film or a plate and set aside to soak for 5 minutes. Fluff with a fork and check the seasoning.
Fold the cucumber, tomato, herbs, chicken and stuffing through the couscous. Divide generously between 4 wraps, drizzle with the yogurt, fold in the ends and roll up, securing with a cocktail stick.
Please note that 200g (7oz) of chicken and 75g (3oz) stuffing or chorizo is not included in the shop ingredients list as this is a leftover, so you will need to buy the product if making this recipe from scratch.
