Lemon and cinnamon bread
There is nothing quite like the smell of bread baking in the oven. Why not substitute your morning brown bread with this delicious lemon and cinnamon loaf 

350g coarse wholemeal (brown flour)

Pinch of salt

1 tsp ground cinnamon
Grated rind of 1 lemon
1 level tsp bread soda
3 tbsp oil (sunflower or rapeseed)

125g of natural yogurt
1 egg
75g dark brown sugar
150ml pint milk

Preheat the oven to 180°C/375°F/Gas 5 and lightly grease a 1lb loaf tin.

Place the wholemeal flour, salt, cinnamon and lemon rind into a large mixing bowl. Sieve in the bread soda and mix well.

In a separate jug, lightly beat the oil, yogurt, egg, sugar and milk together and pour into the dry ingredients. Mix well to combine.

Spoon into the prepared loaf tin and bake for about 55-60 minutes. You will know it is cooked when the underneath is tapped and has a hollow sound.

Allow to cool in the loaf tin for 10 minutes. Remove from tin and cool fully on wire rack.
