Lemon and passion fruit cake

Lovely moist sponge with delicious lemon & passion fruit buttercream icing.
175g sugar
175g butter
3 eggs
175g self raising flour
1 tsp baking powder
1 lemon, zested
1 passion fruit
Icing
200g cream cheese
60g butter
250g icing sugar, sifted
2 tbsp lemon juice
1 passion fruit
Preheat oven to 170°C/325°F/Gas mark 3
Grease and line 2 x 8"/20cm sandwich tins.
Cream butter and sugar.
Add eggs one at a time, beating between each addition.
Sift flour and baking powder, fold in.
Add lemon zest and passion fruit seeds, mix in.
Add mix to prepared cake tins.
Bake for 25 mins.
Icing
Whisk the cream cheese, butter, lemon juice, sifted icing sugar and passion fruit seeds together.
Spread icing on top of one sponge, to be the middle layer and on top of the other, to be the iced top of the cake.
Place the top layer on top of the bottom layer.
Slice and serve.
