Lemon and poppy seed muffin

Lemon and poppy seed muffin
These muffins are a great way to use poppy seeds. They are easy enough to make and you can add chocolate chips or use another fruit if you like.

350g all-purpose flour

1 ½ tbsp baking powder

100g poppy seeds

Pinch salt

120g butter

400g caster sugar

4 eggs

1 tsp vanilla extract

2 tbsp fresh lemon juice

Zest of 1 lemon

Heat oven to 180°C / 350°F / Gas Mark 4. Line a 12-holed muffin tin with paper cases.

Combine the flour, baking power, poppy seeds and salt together in a medium-size bowl. Set aside.

Combine the butter and sugar together in another bowl and beat until smooth and comfy.

Pour in the flour mix and give it a good mix before adding the eggs. Add the vanilla and give it another mix. Add the lemon juice and lemon zest.

Use a hand blender to mix until it is smooth.

Pour the batter into the muffin cases and place in the oven for 30 minutes.

Allow to cool on a wire rack before serving.
