Lemon drizzle buns

These lemon drizzle buns are deliciously moreish and so easy to make.
2 eggs, beaten
85g caster sugar
240ml milk
100ml vegetable oil
300g plain flour
3 tsp baking powder
2/2 tsp salt
4 lemons, zest only
50g icing sugar
1 lemon, juice only
Preheat the oven to 200°C/400°F/Gas 6. Line 12 hole muffin tin with paper cases. Combine the egg, sugar, milk and oil in a mixing bowl. Sift in the flour, baking powder, salt and add the lemon zest.
Spoon the mixture into the muffin cases.
Bake for 30 minutes until golden brown. Leave to cool on a wire rack.
Make the lemon drizzle topping by combining the sugar and lemon juice.
Pour the lemon drizzle mixture over the cooled muffins.
