Lemon Madeleines

These lemon Madeleines are so easy to make and taste delicious.
50g unsalted butter, plus extra for greasing
2 eggs
100g caster sugar
100g flour
1 tsp baking powder
½ tsp lemon juice you can use the juice from a freshly squeezed lemon if you have one juice
½ tsp vanilla extract
Preheat the oven to 190°C/ 375°F/ gas mark 5. Grease your Madeleine moulds with the butter.
Combine your eggs and caster sugar together in a medium sized bowl.
Add the butter and mix until smooth. You can use a handheld blender for this part if you have one.
Sift in the flour and baking powder. Blend together before spooning in your vanilla and lemon juice.
Leave to sit for about an hour.
Cover bowl with towel and let sit for one hour.
Give your batter another whisk before spooning into your moulds.
Place in the oven for 10 minutes until golden
