Lemony leeks and sprouts
Add lemon juice and leeks to liven up your brussels sprouts this Christmas 

300g trimmed leeks, finely sliced

200ml light vegetable stock

200g brussels sprouts (remove outer leaves)

2tbsp freshly squeezed lemon juice

salt and black pepper

Dispose the leeks on the bottom of a large saucepan, pour over the stock and bring to a boil. Put a lid on the saucepan the simmer for 5 minutes on low heat. Add the sprouts.

Give a good stir and simmer until soft (about 4 to 5 minutes). Drain the vegetables in a colander then put them back into the saucepan. Sprinkle with salt and black pepper, add the lemon juice, stir and serve.
