Lemony roast potatoes

3kg potatoes

5 tbsp olive oil

zest and juice 1 lemon

2 tbsp dried mixed herbs

Heat oven to 140°C/gas 3.

Add the potatoes into a large roasting tin with the olive oil, lemon and 100ml water.

Put the tin on a shelf for 1½ hrs.

After 1 hour give the potatoes a stir. Turn up the oven to 200°C /400°F/ gas 7 and cook for another 45 minutes to an hour. Check with a knife to make sure cooked through. 

Sprinkle with a little rosemary before serving
