Light berry cheesecake
You won't believe this dessert is (almost) syn free!

450g light soft cheese

250g quark

20g sweetener

2 sachets gelatin

2 tsp vanilla extract

12 Aldi Harvest Morn Benefit 70 Cal Cereal Bars (or any Slimming World approved cereal bars)

100g strawberries

150g raspberries

150g blueberries

Break up the cereal bars and place in a microwave proof bowl. Microwave for 30 seconds until soft. Transfer into a lined round springform cake tin and press down to create an even surface. Refrigerate.

Prepare the gelatin according to package and let cool. Place the strawberries in a mixer and blend.

Place the soft cheese, quark, sweetener, strawberry sauce, gelatin and vanilla extract in a large mixing bowl and whisk until smooth.

Pour the cheesecake mixture onto the base, cover with cling film and refrigerate overnight. 

Decorate with blueberries and raspberries and serve immediately.

This recipe uses your daily HeA (the low fat soft cheese) and HeB (the cereal bars). The blended fruits can be considered a negligible syn considering the small amount in each slice of cake.
