Mini Oreo cheesecakes

Tasty little cheesecakes with a cookie base.
450g cream cheese
120g sour cream
120g caster sugar
1 tbsp vanilla extract
2 eggs
12 Oreo cookies, plus extra crushed for the topping
Mix the cream cheese, sour cream, sugar, vanilla and eggs in a bowl until well combined.
Line a muffin tray with paper cases.
Place one whole Oreo at the bottom of each case. Top with the cheesecake mixture and scatter with crumbled Oreos.
Bake at 140°C/275°F/Gas 1 for 20 minutes.
Cool completely, then refrigerate for at least 3 hours before serving.
