New potatoes with rosemary
Crisp new potatoes with a hit of rosemary are a classic option for Christmastime.
 

1½ kg potatoes, half unpeeled,

3 tbsp olive oil

Large handful rosemary sprigs

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line 2 baking trays with greaseproof paper and set aside.

Boil the potatoes for 10 minutes until tender, then drain.

Drizzle half of the oil over the baking trays.

Sprinkle the rosemary over the potatoes to coat well.

Using a potato masher, squash the rosemary into the potatoes allowing the potatoes to split slightly.

Drizzle the potatoes with the remaining oil, season with salt and roast for 50 minutes or until golden around the edges.
