This slightly sweet nut bread is great for toasting and is so versatile.
3 eggs, duck or hen
1 tbsp runny honey
60g butter melted
280g ground almonds
Half tsp bread soda
Preheat the oven to 170C/ 325F/ gas mark 3. Lightly grease a 1lb loaf tin.
In a medium-sized bowl mix the eggs with an electric mixer or a fork.
Pour in the honey and melted butter and mix.
Sprinkle in the almonds and bread soda and mix until combined, ensuring there are no lumps.
Turn into a well-oiled or buttered loaf tin and smooth out the surface with a knife.
Bake in the oven for 40-45 minutes until golden brown.
Leave to cool slightly in the tin, turn it out and enjoy with a good slather of butter.
