Old fashioned ginger bread

375g all-purpose flour
1tsp baking soda
Pinch sea salt
2tsp cinnamon
2tsp ginger
2tsp allspice
150g granulated sugar
50g candied ginger pieces, chopped fine
45ml vegetable oil
255g molasses
1 egg, at room temperature
175ml milk, at room temperature
Icing sugar
Preheat the oven to 160ºC / 350ºF / Gas Mark 4.
Grease and flour a 20 cm x 20 cm baking dish and line the bottom with parchment paper.
Sift all-purpose flour, baking soda, spices and salt into large bowl.
Add sugar and candied ginger; stir to combine ingredients.
In medium bowl whisk vegetable oil, egg, milk and molasses until combined.
Make a well in center of flour mixture and pour the wet ingredients into the center.
Mix batter until well combined taking care not to over mix or the gingerbread will be too dense.
Spoon batter into prepared baking dish.
Bake gingerbread approximately an hour or until a toothpick inserted in the middle comes out clean.
Dust with icing sugar and allow to cool completely.
Cut into 16 squares.
